Pineapple Black Bean Salsa

- ½ Pineapple
- 1 Bell Pepper
- 1 Red Onion
- 1 Can Black Beans
- 1 Jalapeno
- 1 Lime
- ½ Head Cilantro
- Rinse and drain the black beans well.
- Finely dice all of the vegetables and cut the pineapple, then mince the Cilantro.
- Combine all the diced ingredients in a bowl. Juice the lime and add salt and pepper to taste and stir the salsa. Taste and add more lime juice, salt or pepper as needed.

What if I don’t have all these ingredients?
- Turn that frown upside down... get creative!
You can substitute similar items like a peach, mango or pear for the pineapple, and any color bell pepper will work as will any color onion. Lemon juice or Vinegar can sub for lime, and parsley can sub for cilantro!
Can I control the heat?
- Not all peppers are created equally...
If you like it mild, leave out the pepper or use less and be sure to remove the ribs and seeds. Like it spicy? Use a serrano pepper and include the ribs and seeds! Be careful though, the heat can sneak up on ya!

Ramblings of a Line Cook
As a kid, the only kind of salsa that existed in my world was Grandma’s restaurant-style, red salsa. It is SO good but unfortunately, I cannot share that particular recipe with you because it is her secret recipe, and she would know if I told you. And believe me, you do not want to cross Grandma. She’s lots of fun and has a great sense of humor until you do exactly what she told you not to do. Not that I ever did, just my sisters of course, but trust me on this, as long as we don’t discuss what goes in that particular salsa, we’ll be just fine.
What we can discuss, is this fantastic black bean pineapple salsa that I decided should become a recipe because I thought the colors would look good together. And I had half a pineapple and some black beans that needed some love. Bada-bing, bada-boom you got yourself a killer salsa.
Pineapple is always a good choice, the black beans add some bulk to the salsa, jalapeno brings the heat, cilantro, and lime... Well, it's hard to have a good salsa without them, and the rest is all up to you! I like red bell pepper to contrast the green and some red onion because red onion is really more purple, wouldn’t you say? I know my once white cutting board would... Give this salsa a whirl and keep an eye out because this time of year I tend to turn all sorts of fruits and veggies into fantastic, summer salsas. Enjoy with chips or over fish or chicken!
